King Cakes are Here (And Coffee Too!)

King Cake season is just around the corner! NOCCA’s Culinary Arts students and faculty are excited to announce this year’s king cake program, featuring two classic king cakes and a rotating series of limited-edition flavors, all made by NOCCA Culinary Arts students and faculty. NOCCA King cakes are priced from $25 and available to pre-order now at  NOCCAMarketplace.com (with US shipping available). Proceeds from NOCCA’s king cake program support the school’s Culinary Arts department and Louisiana’s next generation of chefs.

NOCCA King Cakes will be available for local pickup January 6 – March 2 at NOCCA and select local retailers including King Cake Hub. Those who place pre-orders by Friday, December 20 will receive a 10% discount with the promo code “EARLYBIRD25.” 

“Making king cakes provides a great opportunity for our Culinary Arts students to improve their baking skills, dream up new recipes, and learn what it takes to make a business successful,” Said NOCCA’s Culinary Arts chair, Chef Dana D’Anzi Tuohy. “Our faculty and students handle production, our partners at the NOCCA Foundation help us market and sell them and the proceeds go back into our program. It’s a win-win-win!”

2025 NOCCA King Cake Menu:

  • Louisiana Satsuma & Almond: Your family, friends, co-workers, and fellow parade-goers will fall in love with this king cake, made with rich almond paste and tart, tangy Louisiana satsumas. It’s braided with a brioche-style dough, glazed with even more satsuma, and dusted with purple, green, and gold edible glitter. Give it as a gift or enjoy it yourself!
  • Gluten-Free Cinnamon: This is ideal for anyone who loves the taste of a classic New Orleans king cake but can’t do gluten. Soft and pillowy inside, with a not-too-sweet cinnamon ribbon and crust, vanilla glaze, and shimmery edible glitter, this is a cake for everyone to enjoy!
  • LIMITED-EDITION FLAVOR: Salted Caramel Apple: For our first limited-edition king cake of the 2025 Carnival season, we’re wrapping winter spiced apples (think cardamom and clove, not apple pie!) and lightly sweetened cream cheese in a brioche dough, glazing it with salted caramel, and finishing it off with crunchy caramel bits and edible glitter. It’s like a whole Carnival parade in a box! Available through January 26, 2025.
  • Additional limited-edition flavors will be announced at a later date, including a special Valentine’s Day King Cake.

French Truck’s “Big Chief” Carnival Blend: In addition, the NOCCA Foundation is thrilled to be this year’s French Truck Coffee non-profit partner for its “Big Chief” Carnival blend, a unique, whole-bean blend of naturally processed coffees from El Salvador, Ethiopia, and Brazil. French Truck Coffee will donate a portion of sales from every 12 oz. bag of “Big Chief” coffee purchased to the NOCCA Foundation, which provides supplemental funding for NOCCA and advocacy for its world-class program.
